Thyme honey glazed chicken breast

In the holiday season usually I drown in honey. My all time favourite is acacia and orange flower. I received a nice jar of thyme honey from a friend whom I invited for lunch. I just had to have a taste of it immediately and that made me want to change the planned menu. That is how this thyme honey glazed chicken breast ended up on our plates together with thyme jus and polenta.


Ingredients:

4 chicken breasts
1 garlic bulb
2-3 thyme sprigs
2-3 tablespoon olive oil
1 tablespoon balsamic vinegar
2 tablespoons thyme honey

1 tablespoon soy sauce
salt, pepper

Preheat oven to
150°C. Season chicken breasts with salt and pepper. Heat olive oil and fry chicken breasts from both sides together with the thyme and the halved garlic bulb. For the glaze mix the balsamic vinegar, thyme honey and soy sauce. Place the glazed breasts on a baking sheet and leave it in the oven for 15-20 minutes. During the cooking time glaze the breast frequently with the marinade.
