Cheesecake - Daring Bakers

The April 2009 challenge is hosted by Jenny from Jenny Bakes. She has chosen Abbey's Infamous Cheesecake as the challenge. I guess I have never baked a challenge that late, like this one. I was standing in the kitchen and wondering how I should flavour it. After a while I decided to add elderflower syrup to the cake and served among in elderberry syrup poached rhubarb.

Elderberry and rhubarb? Now, that's inspired! Plus your cheesecake has so much spring it's almost souffle like. Libby

The cake looks so yummy! I made a mango cheese cake last 2 weeks but not a baked one. It's a chilled mango cheese cake.

I have no idea what elderberry tastes like, but it sounds intriguing. This is truly a cheesecake honoring the spring! Thanks for being a part of the April Daring Baker's Challenge!
